If you buy your carrots bunched don’t throw away the bushy green tops; chop them off to prevent them draining moisture from the carrots, then use within two days. Raw carrot greens taste quite bitter but small amounts work well in salads. Or for an easy side dish, sauté a bunch of greens in a pan with olive oil, 1 minced clove of garlic, 1 diced shallot and a pinch of red pepper flakes.
