• Carrots were originally a Purple colour naturally

In the UK these purple carrots are usually sold around the time of Halloween as (quite pricey!) substitute "witches noses"

Purple Carrots are often grown in the Shetland Islands, at the top/north of Scotland. Old variety potatoes such as the Shetland Black are often sourced from there too. These are sold in upper end UK supermarkets in Spring, usually from late February onwards

The orange colour of carrots that we are now familiar with is not their natural colour. Carrots were modified by their Dutch growers in the 17th century to match the national colour - Prince William of House of Orange had become the joint monarch of Great Britain when he married Mary. She was by birth of Stuart ancestry

An internet search for "purple carrots" revealed a number of images of present day purple carrots. Carrots also come naturally in shades of red in certain parts of the world

If you buy your carrots bunched don’t throw away the bushy green tops; chop them off to prevent them draining moisture from the carrots, then use within two days. Raw carrot greens taste quite bitter but small amounts work well in salads. Or for an easy side dish, sauté a bunch of greens in a pan with olive oil, 1 minced clove of garlic, 1 diced shallot and a pinch of red pepper flakes. Cook for just long enough to wilt and turn bright green. • • PLEASE DO NOTE:
some people can be sensitive to the alkaloids in carrot greens

• As with Carrots, eat too much Pumpkin and your skin colour could change

Raw Broccoli and Bladder Cancer Survival

The stems of broccoli have a mild, sweet flavour and can be eaten raw, like carrot sticks, with hummus, or grated finely into coleslaw. They make a great base for pickles, too. Peel 4 broccoli stems and cut into long thin slices. Place in a jar, add ½ teaspoon of salt, cover and shake, then refrigerate overnight. Drain any water that’s accumulated, then add 1 minced clove of garlic, 1 tablespoon of sherry vinegar, and 2 tablespoons of olive oil and toss together. Refrigerate overnight then devour the garlicky goodness straight from the jar

Cabbage or Kale Chips

It’s a doddle to make pesto using vibrant green celery leaves and it makes a nice change from basil. In the food processor, blend together 4 cups of celery leaves, ⅓ cup raw blanched almonds, ¾ cup extra-virgin olive oil, 2 peeled garlic cloves, ⅓ cup grated Parmigiano-Reggiano, and 1 teaspoon salt. The leftovers can be frozen, just leave out the cheese then add once it’s thawed. And here’s one for coriander haters; due to their similar texture and clean taste, celery leaves can replace the love-it-or-loathe-it herb in salsas and stir-fries
